I know i have been slacking


However I get this recipe request often:
White Rice and Pink or Red beans
Beans

1 1/4 of diced ham

1 pound pink beans (dried) or 1 can of goya pink or red beans
8 cups water
2 teaspoons salt
1 (8-oz) can tomato sauce
1/4 cup sofrito (you will find this in the freezer its white and blue small bowl) 1/2 pound calabaza (West Indian pumpkin) (cleaned, seeded, chopped
3 cloves minced of garlic
1/4 cup of chopped cilantro
A pinch of oregan
1 packet of Sazon
1 packet of Sazon with annato


Soak the beans per package directions over night.Drain the beans. Place the beans and the rest of the ingredients in a large pot.Bring the beans to a boil over high heat then lower to medium heat.Cook over medium heat for 1 1/2 hours. Stir occasionally to avoid sticking. The beans should be soft. If not, cook a little longer.If the beans become too thick you may add about 1/4 cup of water at a time to thin them out.Add sofrito, ham, pumkin, minced garlic, oregano, cilantro, sofrito, both sazon and let simmer for about 15 min


White Rice

Ingredients:


4 cups water

2 cup medium grain rice

pinch of salt to taste

1/2 cup of canola or vegetable oil

Preparation:

1. Bring the two cups of water to boil in a sauce pan.

2. Add the rice oil and salt.

3. Allow to boil for about 1 minute. Stir once to prevent sticking. Or until water has evaporized.. Turn and cover. Check rice occasionally for tendernessThere you go..Buen Provecho,G
